Deli Digs #1: Healthy Egg Salad

I live in NYC and am constantly on the go as a trainer. This means being reeeeeally creative at the deli to make tasty healthy options on the fly. Try this healthy "macro plate" in a pinch!

  • 3 - 4 hard boiled eggs (can remove yolk from half of the eggs for fewer cals)

  • 1 Greek yogurt 2%

  • 1/2 avocado

  • Whole Romaine lettuce leaves

  • S + P

Mash eggs with half of the Greek yogurt, plus salt and pepper. Use romaine leaves to wrap egg salad and avocado. Voila!! Incredible amount of protein, healthy fats, low carb. Definitely will keep you satiated for a long time!
