We had Taco-less Tuesday over here at Stellis Manor the other night, and it was muy delicioso. And also super healthy. Try this tonight.
Ingredients for 2 (+ leftovers if you're lucky):
99% lean ground turkey meat, 1 lb package
1 can black beans
2 cups spring mix
1 large tomato, diced
1/2 red onion, diced
1/2 sweet onion, diced
1 red bell pepper, diced
1 avocado, sliced
1/2 cup 2% plain Greek yogurt
Cilantro, a few sprigs
Taco/Mexican spices to taste
s + p to taste
1 tbsp coconut oil
On medium heat, put coconut oil in skillet. Add sweet onions and red bell pepper to skillet. Allow to simmer, careful to not burn. About 3-5 minutes. Add turkey meat to skillet and cook on medium for roughly 15 minutes or until there is no pink. Stir in taco seasoning, s + p. When you add the turkey meat, place black beans in a small sauce pan and allow to heat on low so they will be done at the same time.
To plate this pretty little dish:
Add 1 cup greens to half of plate, and 1 cup ground turkey meat + 1 cup black beans to the other half. Add any of the other ingredients to taste, a dollop of Greek yogurt, topped with diced tomoatoes and onions, avocado and cilantro as a garnish. Squeeze fresh lime over top. Fiesta en tu boca.
*in the picture there IS one small corn tortilla hidden underneath the roughage. Your eyes do not deceive you. You may add this if you'd like! If you're watching carbs, steer clear. The macros below do not factor in said tortilla.
