Tropical Chicken Salad

I was playing around in the kitchen today for lunch, and invented such a pretty awesome recipe for healthy chicken salad.  Since it's a pretty balmy June day here in NYC today, this was the perfect bite to make for lunch.

 

 

I had already baked chicken the night before for dinner, so I used a 5 oz. breast of cooked white meat for this recipe.  If you're starting from scratch just make sure to bake or grill the chicken ahead of time to allow it to cool before mixing. Otherwise, things won't go so well. #meltygreekyogurt #gross

 

What you'll need:

  • 5 oz white meat, cooked and cool

  • 1-2 tbsp of 2% plain Greek yogurt

  • 1 tbsp golden raisins

  • 1 tbsp coconut crisps, lime flavored

  • 1 green onion, chopped

  • 2 lime wedges

  • s + p to taste

 

Chop up chicken, mix with above ingredients, squeeze limes over salad.  Serve on top of fresh spinach or diced watermelon for an extra delish summertime bonus! Healthy dose of fats from yogurt and coconut, lean protein, and carbs from fruit.  Plenty of flavor.  #limeinthecoconut

 

Chicken Salad only:                            243  calories | 35 g protein | 12 g carbs  |  6 g fat

 

+ Watermelon (1 cup diced):               46 calories  | 1 g protein  |11.5 g carbs | 0.2 g fat 

 

+ Spinach (1 cup):                                   7 calories   | 1 g protein | 1 g carbs  | 0.1 g fat
